Change the menu at 6pm. Leave the table cards alone.
Your menu is right on the day it's printed. Then the fish doesn't arrive, a supplier swaps the tomatoes, and someone is at the pass crossing out a dish with a marker while table one sits down. Front of house needs one page that stays true through service.
A working week, in pages
The bream ran out at 7:40
Table six just ordered the last one, and table seven is reading it on the menu. Text the change and every phone open on that page updates. The QR code on the table doesn't move.
menu tonight: take off the sea bream $29, add hake with salsa verde $27, burrata stays at $14
"Does the pesto have nuts?"
The new server doesn't know, so it's a walk to the kitchen in the middle of the rush, and then the table has another question. Each dish can carry tags for vegetarian, vegan, gluten-free, dairy-free and nuts, set from the recipe your kitchen really uses. They're only as right as what you enter, so change them when a recipe or a supplier changes.
menu: pesto linguine $19 tag v and n, lamb flatbread $16, lentil soup $9 tag vg and gf
How many lamb shoulders for Sunday?
Take-home roast orders are on three dockets and a voicemail, and the butcher wants a number by Thursday. Customers pick their boxes, choose pickup or delivery, note any allergies and pay, and each order lands in your replies. When the last shoulder goes, mark it sold out.
order form for Sunday roast boxes: lamb shoulder for four $68, nut roast $44, pickup 11 to 1, delivery $6
Forty minutes for brunch
By half past ten the doorway is full of people asking the host how much longer. Put a QR code at the door showing the number you're on and the wait, and change it by text between tables. They can go for a walk and check the number from the end of the street.
queue now seating 14, next 15 16 17, 25 minute wait
The birthday for eighteen
You've held the back room on the busiest Saturday in December for a group whose numbers are still "probably". A $200 deposit with the date and the set menu on it turns probably into a booking. If it isn't paid, you know to give the room to someone else.
deposit Nina Patel, back room Saturday Dec 5 at 7pm for 18, set menu $990, $200 to hold the room
A voucher, with a line at the till
December brings people to the counter wanting a gift voucher for a sister two hours away, right as the coffee queue reaches the door. Text one with her name and the amount, and send the buyer the link while they finish their flat white. They pay from their own phone and forward her the code and the valid-until date.
voucher $50 for Emma Walsh from Joe, for sale, valid one year, any food and drink at Bramble Kitchen
Questions
Do the allergen tags cover my legal duties?
Not on their own. Rules on what must be shown differ by country and region, and may cover more allergens than these tags do. Treat the tags as a help for guests, ask them in the footer to tell staff about allergies, and check your local requirements.
Can hot food and packaged goods be taxed differently on an order page?
Yes, each product can have its own rate. How food is taxed depends on where you are, so set the rates with your accountant. Card orders on the page run through your restaurant's own Stripe account, so link that first.
Can I stop orders when the kitchen is slammed?
Yes. Pause the order page and it shows your own message instead of taking orders, then open it again when the tickets clear.
